Camping Recipe: Foil-Packet Chipotle Shrimp

Ingredients

  • 1 1/2 lbs of peeled and deveined shrimp
  • Olive oil to drizzle
  • 1 tbsp of chipotle powder 
  • 1/2 tsp of kosher salt
  • 1/2 tsp of freshly ground black pepper
  • 2 cups of quartered grape tomatoes 
  • 2 cups of diced zucchini 
  • 1 cup of small-diced baby potatoes 
  • 1/2 yellow onion
  • Fresh cilantro leaves to garnish 

Instructions:

  1. Preheat a grill pan over medium heat.
  2. Prepare 4 large pieces of foil. 
  3. Split the shrimp evenly among the foil.
  4. Drizzle oliveoil over the shrimp then season with chipotle powder to taste, and a pinch of salt and pepper. 
  5. Slice the onions.
  6. Top the foil packs with the tomatoes, zucchini, potatoes and the onion.
  7. Season the vegetables with salt and pepper. 
  8. Wrap up the shrimp and vegetables in the foil packets making sure the foil packets are wrapped tightly.
  9. Grill the packets until the shrimp are cooked through and the vegetables are slightly tender,  or for about 15 minutes. 
  10. Serve in the foil packets and garnish with cilantro leaves.
